Information from state Health Department records for inspections April 14 through May 1. Restaurants are listed in alphabetical order. All reports are from regular food service / food store inspections unless otherwise noted.
• Critical violations are defined as items that relate directly to factors that lead to food-borne illness, and must be corrected immediately.
• Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.
April 14

Critical violations include: Do not store raw eggs above pre-cooked foods. Prep cooler is not keeping taco condiments cold; front door is not attached. Unit must be replaced. Maintain cold foods at 41 degrees or below at all times. Repair fajita cooler to maintain food at 41 degrees or below.
Noncritical violations include: Need thermometer in fajita cooler. Cooler reads 57 degrees.
April 18

Critical violations include: Reheat hot-dogs before putting in hot holding. Need test strips for sanitizer.

Critical violations include: Remind employees to wash their hands, not just sanitize, corrected. Employee cleaned in-place equipment and floor with a spray hose and spray from floor can contaminate already clean utensils. Rewash and sanitize all equipment that could have become contaminated. Care should be taken to prevent contamination of equipment during cleaning. Equipment must be sanitized. Sanitizer exceeds 400 ppm. Quaternary ammonia concentration should be 200 ppm. Do not store ham above the pan load line.
Noncritical violations include: Replace broken and cracked containers.

Must have sanitizing solution to sanitize food contact surfaces and to store sanitizing wipes at a concentration of 50-100 ppm chlorine or 200 ppm QUAT, corrected. Must store all foods 6 inches or above off of floor to prevent contamination of foods, corrected. Must keep all hot foods at 135 degrees or above at all times, corrected. Must keep all cold foods 41 degrees or below at all time corrected.
Noncritical violations include: Must have accurate and operational thermometers in all cooling units. Must have test strips to test concentration of sanitizing solution and ensure use of strips every time you prepare solution.

Critical violations include: Maintain hot food at 135 degrees or above. Establishment will use time as a control. Do not hold food for more than four hours. Food must be destroyed after four hours. Chlorine sanitizer should be between 50-100 ppm.
Noncritical violations include: Double check heat lamp source to ensure bulb is actually for heat lamps.

Critical violations include: Establishment uses time as a control. Items must be marked with time use by or time destroyed or time taken out of temperature control. Accurate time is required. Employee marked time during inspection and it was more than four hours. Employees must wash hands prior to glove use even when changing tasks. No sanitizer at three compartment sink. This is a repeat violation. Use packet sanitizer until repaired. Chlorine 50-100 ppm Quaternary Ammonia 200 ppm. Manger does not know which test strips are for dish sanitizer. All employees must be trained on proper sanitizer. Fryer cleaner was open and above fryers. Employees must wash hands after placing raw hamburgers on grill-prior to making sandwiches.
Noncritical violations include: Employees must wear hair restraints during food prep-even managers.

Noncritical violations include: Vegetables cannot be stored below dirty dishes, corrected. Wiping cloths need to be stored in sanitizer water. Icecream scoop needs to be stored in water more than 135 degrees or in running water.
